Raspberry Beret
muddle 3 raspberry into
.5 oz lemon oleo-saccharum*
.5 oz cocchi americano
.75 oz fresh lemon juice
.25 oz egg white

Dry shake, add ice, re shake, fine strain into a coupe, garnish with a raspberry on a prism prick *oleo-saccharum.
Peel entire lemon with as little pith as possible, muddle peels, add 1/2 cup sugar and let sit at least 1 hour
